Day Five
I kicked that pesky pound to the curb. So glad I stuck with it!
Tonight we found bread that only has 5 net carbs per slice! Oh yeah!! We put it to good use immediately and had ham and cheese sandwiches....and pork rinds. Friend was thrilled because it meant she could have toast with her bacon and eggs. I think she was holding back some tears of joy.
We did the three mile walk this evening, me, Friend, and Charles. It was the perfect way to clear my head and de-stress from a crazy/busy week. We went ahead and bought two boxes of ice cream bars...it could be another crazy week, better to be prepared.
I am looking forward to sleeping in and having a restful weekend.
Anyone else planning a lazy Saturday?

But, it's a really big accomplishment that I didn't quit on the spot. I kept up with my diet today even though the scale was discouraging. And I'm proud of me for that.
I didn't get a chance to exercise today, got home too late.

Day Three
Today I learned something. Something wonderful. I learned that pork rinds have NO carbs! No carbs at all! This is a strange, upside-down world where I can't eat yogurt but I can have all the pork rinds I want.
Tonight we had bacon cheeseburgers for dinner. We also had tossed salad and a bag of pork rinds. I found that light ranch dressing only has 3 carbs/2 tbsps. Nice. I'm trying to stay under 20 carbs per day and so far, though it hasn't been easy, it has been doable.
I opted to change things up a bit and take a bike ride this evening instead of a walk. I think I did a six mile round trip, out to my church and home again. Again, not easy, but doable.
The worst part of my day was when I realized there was only one ice cream bar left and I promised Friend she could have it. She offered it to me, because she's awesome like that, but I just can't be that person. The best part of my day was when my aunt called to tell me that she took an order for 125 cake pops for my little bakery business. (yeah, that's irony, I make cake pops to order.)
I need some fresh ideas for lunch. Any ideas out there?

Day Two
I lost two pounds!! Who would've thought that my favorite part of my day would be first thing in the morning when I stepped on that scale?
This is an illustration of how I felt this morning.
Notice the victory fist pump in the air, my declaration that, "I am a Beast Warrior!" Yeah. It felt that good. I rushed into the living room to tell Friend. I've never been so excited to weigh 151 pounds.
Today for lunch I had cheese, summer sausage, and an egg. 0% carbs. 100% delicious.
I went on a 2 mile walk over my lunch break and a 3 mile walk with Friend and Charles this evening. My legs are angry now.
I think the worst part about today was when someone brought me a fruit and yogurt parfait and I couldn't eat it (even though I really wanted to) because there were like 28 carbs in it. Well over my legal limit. Not cool. :(
At any rate, here I am on Day Two.

Day One

It's been an interesting day to say the least. A really big day for me because it was my first day as the Customer Care Coordinator where I work. I don't know if I've ever been promoted before...and this was kind of like a promotion...of sorts. I think that was the best part of my day. The worst part of my day was seeing my worship leader in drag....a dress, a wig...and some earrings. I know it was for a play and everything, but Sunday morning worship just won't quite be the same anymore. (He did make me laugh 'till I cried, though...so-bonus points.)
Dieting actually wasn't too bad. Now that I've learned that there are a zillion carbs in everything, I am finding that my adjustment won't be easy but it will be doable.
Tonight, Friend and I had salmon.
It was a fresh, seasoned with "salmon rub" and cooked in the skillet with olive oil. Delicious. We added to that a healthy serving of broccoli and cheese and were both completely full when we left the table.Today's exercise was a three mile walk around town with my dog. The weather was simply beautiful, and Charles and I really enjoyed it.
Friend took this picture of me after the walk so my hair may be a bit askew.

No Carb Kitchen
So I did what I've been putting off for too long. I cleaned out my refridge.
There's no shame among friends. I figure, if I can tell you all how much I weigh, I can let you look inside my unclean refridge.
Total Sidebar-My goal in life is to be the kind of person who doesn't need 24 hours notice before friends come over. This means I'll either have to keep my house cleaner or get friends with lower standards.
But I digress-Notice the milk, cake-pop batter, soda, mystery items in styrofoam containers. Not good for my low-car venture. So, today we went to the store. (We= me and Friend, my awesome roommate who is doing this challenge with me.) And I realized something, some of my favorite items have a crazy amount of carbs- must be all the added sugars. So things I thought I could eat, now I have to make some substitutions.

Such as: low-carb ice cream, Atkins bars, low-carb yogurt, beef, summer sausage, and cheese.
Among other things.
I'm trying to get all my favorite carbs in this weekend before Monday. So I'm eating pizza, chocolate, soda, and all the other delicious and bad for me stuff that's off limits. Mmmmm forbidden carbs.
